Guy Mirabella cooks lunch in the Franque Dining Room, the first of a monthly residency!

Menu: Minestra di verdura. Goulburn river trout, deboned and filled with golden raisins, pine nuts, mixed herbs and wrapped with prosciutto. French bean and fennel salad. S.M. Novella Firenze Liquore al Cioccolato biscotti. Espresso. Wine from Crittenden Estate.

I have been blessed with Sicilian parents who grow their own produce from their garden. My father Diego has recently passed and mum is determined to keep his garden alive. Diego loved showing his garden just as much as he enjoyed working in it. There are informal plantings of fruit trees balanced with rows of various varieties of tomatoes. In summer Dad’s famous cucuzzi supplies Mum with it’s tender stems, leaves and tentrils for her summer soup ‘minestra di tenerumi.’ In summer and late autumn Dad’s large brown turkey fig tree with its juicy pink brown interior and sticky honey flavoured figs supplies the café for both our savoury and dessert counters. Ricotta stuffed and pancetta wrapped figs or pear and fig cake with lemon syrup are much loved and give pleasure to many.
